I made this Hot Corn Dip for Amy's Super Bowl Party. It. Was. Yummy.
{Thanks for the invite Amy... Wish we could've stayed longer!}
Lightly Adapted from Emeril
What you'll need:
Bag of Fritos
2 T of butter
1lb bag of frozen corn
Bell peppers {I just used a cup of frozen peppers}
Salt and Pepper
1/2 medium yellow onion, finley chopped
1 green onion, chopped
1 small can of diced green chilies
2 teaspoons of minced garlic
1/2 cup of real mayo
1 bag of cheddar jack shredded cheese
1/2 teaspoon of cayenne pepper
Toss the frozen corn in a skillet with a tab of butter and some salt and pepper. Cook it until it's soft, then transfer it to a big bowl.
In the same pan, toss in the peppers, onions, green onions, and garlic with a tab of butter. Add the chilies and cook until onions and peppers are soft.

Without all the onions this sounds delicious. Bring some over for a play date.
ReplyDeleteCorn? When did I eat corn?
ReplyDeleteWill definnitely be adding this to my recipe book... ahem... recipe file on my computer. Does anybody have a recipe book anymore?
ReplyDeleteYour husbands post was hilarious! I might let John post on mine sometime.
