Hot Corn Dip

I made this Hot Corn Dip for Amy's Super Bowl Party. It. Was. Yummy.

Lightly Adapted from Emeril

What you'll need:
Bag of Fritos
2 T of butter
1lb bag of frozen corn
Bell peppers {I just used a cup of frozen peppers}
Salt and Pepper
1/2 medium yellow onion, finley chopped
1 green onion, chopped
1 small can of diced green chilies
2 teaspoons of minced garlic
1/2 cup of real mayo
1 bag of cheddar jack shredded cheese
1/2 teaspoon of cayenne pepper







Toss the frozen corn in a skillet with a tab of butter and some salt and pepper. Cook it until it's soft, then transfer it to a big bowl.




In the same pan, toss in the peppers, onions, green onions, and garlic with a tab of butter. Add the chilies and cook until onions and peppers are soft.


Transfer that mixture to the bowl with the corn. Add the mayo, cheese, and cayenne pepper.

Give it a good stir. Then transfer it to a baking dish. I just used a ceramic pie pan and it worked great.

Bake at 350 for 15 minutes... and serve with Fritos! :)
